Citation: At approximately 1035 hours, while performing the review and observation and recordkeeping component of an unscheduled 03J02 procedure task I observed the following at CCP# 2B (Final Wash Cabinet); of the 10 randomly selected whole duck carcasses subsequent the Final Wash Cabinet, one carcass has an approximate 1/4 - 1/2" fecal smear on the inside posterior portion of the right thigh and attached abdominal fat. The fecal material is of a darkish green color and is consistent with a semi solid material. The establishment records indicate that the monitoring and direct observation (verification) of CCP# 2B were not performed prior to or at the time of the findings. At the time I immediately notified Production Supervisor, [redacted] verbally of the non-compliance, I asked Mr. [redacted] if the monitoring and verification of CCP# 2B were performed as the evisceration process was completed. He stated that the monitoring procedure including the verification procedure were not performed. The establishments Slaughter HACCP plan signed and dated 5/5/11, page 2, section titled Plan under Critical Limits states: "[redacted] "; under Monitoring Procedures and Frequency states: "[redacted] " and under Verification Procedures and Frequency states: "[redacted] ". The establishment initiated immediate corrective actions on the affected whole duck carcass.

417.2(c)(4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits
