Citation: At approximately 1330 hours the following was noted while a scheduled 01C02 procedure task was performed: -The Product Wash Sink in the Ice Room does not have a pipe affixed to the sink drain allowing waste water to discharge on the floor and run along the product and employee traffic area of the floor, approximately 2' to the floor drain. -The frame molding along the left side of the Entrance/ Exit door to the Offal Room is loose from the wall structure and is in disrepair. -The door seal affixed to the Equipment Storage Room door from the Production Cooler is broken and in disrepair and the Equipment Storage Room door from the Ice room has eight rusted bolts on the interior portion of the door. This is a failure to meet: 9CFR 416.1, 9CFR 416.2(e)(3), 9CFR 416.2(e)(4), 9CFR 416.2(b)(1), 9CFR 416.4(b). HACCP Coordinator, [redacted] was verbally notified immediately of the non-compliances. This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action. Past Similar NRs - Previous Ineffective Plant Actions: Prod. supervisor will monitor this area to prevent re-occurrence, will also point this out to sanitation person NR: 51-2010 dated 12/27/2010

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.2(e)(3) Prevent adulteration of product, water supplies, equipment, and utensils and prevent the creation of insanitary conditions throughout the establishment;

416.2(e)(4) Prevent adulteration of product, water supplies, equipment, and utensils and prevent the creation of insanitary conditions throughout the establishment;

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
