Citation: At approximately 0730 hrs, while performing pre-operational inspection after the establishments own pre-operational inspection was complete and prior to the start of operations the following non-compliances were observed. In the cut-up room, rust was observed on the wing cutting blade and the leg cutting blade which are both direct food contact surfaces. Upon removing the leg cutting blade dried chicken residue was observed on the underside of the blade and on the metal plate the blade rests on. Cut-up line was rejected and tag # B39416949 was applied. QC [redacted] and sanitation manager [redacted] were present at the time of the findings. SSOP plan last updated and signed on 10/5/10 page 3, pre-operational sanitation under establishment method for cleaning equipment states"[redacted]." These insanitary conditions are in violation of but not limited to 9CFR 416.1, 416.13(c) and 416.4(a).[newline][newline]This document serves as written notification that your failure to comply with regulatory requirements could result in additional regulatory or administrative action.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
