Citation: On this date at approximately 0800 hours while performing the scheduled pre-operational inspection after the establishment personnel had completed their inspection inspector and I found the following non-compliances: Kill Floor- The splitting saw and its power cord was found with fat, blood, fecal material and bone dust from the previous day's operations. The washing and sanitizing of the splitting saw was completed under USDA inspection prior to use so no reject tag was required. Regulation:
416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOP’s before the start of operations.
