Citation: On July 12, 2010 while performing the above procedure and I have found the following noncompliance. There were 12 beef slaughtered. The first beef slaughtered was >30 months of age. Upon monitoring the procedures, the vertebrae column was not inked and the vertebrae column was removed on the slaughter floor. According to you HACCP Plan Flow Diagram for the Beef/Veal process, it shows that [redacted]. It also states "[redacted]." This is CCP 1B. Upon reviewing the SRM Removal Record and the SRM Identification Record they both state " [redacted]" , Plant Manager has been informed of these noncompliance's in both writing and orally. This document serves as a written notification that failure to comply with regulations could result in further regulatory and or administrative actions.

Regulation:

417.2(c)(4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits;

417.5(a)(3) Records documenting the monitoring of CCP’s and their critical limits, including the recording of actual times, temperatures, or other quantifiable values, as prescribed in the establishment’s HACCP plan; the calibration of process-monitoring instruments; corrective actions, including all actions taken in response to a deviation; verification procedures and results; product code(s), product name or identity, or slaughter production lot. Each of these records shall include the date the record was made.
