Citation: While performing pre-operational sanitation at approximately 0700 hours on the slaughter floor after the establishments review of their pre operation sanitation the following noncompliance was noted . The splitting saw had fat and meat residues from the prior days slaughter production found inside around the wheels of the band saw blade area. was notified and the band saw was cleaned and sanitized immediately. No tag was issued . After a review of the noncompliance's in the last 3 months One similar NR record #0003-2010-15645 was issued on 07/09/2010 with the same root cause noncompliance documented at pre operational sanitation. Management was notified that their previous further planned action stating that plant inspection personal will be given review on procedures was ineffective. Continued failure to meet regulatory requirements can lead to enforcement action described in 9CFR 500.4.

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
