Citation: During the course of the FSA, on September 22, 2011, I observed Mr. (kill floor Foreman) going from the kill floor to the processing room to look for a thermometer without taking any precautions to reduce the risk of cross-contamination as stated in the Sanitation SOP page 3 "[redacted]." ). Moreover, I observed a designated employee in the raw areas wearing the same coat handling and preparing hot dogs, and moving to RTE room with the same coat to cook, cool handle post lethality exposed product increasing the risk of cross contamination. This is a noncompliance with 9 CFR 416.13(c).
Regulation:
416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
