Citation: While performing a pre-operational inspection of the processing room at Est.18894 Shirks Meat Market found the following non-compliance. The Grinder was found with two pieces of product residue on the rubber gasket where the worm/screw butts up against. In the hopper of the grinder and on the underside of the lid two small pieces of product reside where found adhered to food contact areas. The Bowl Chopper was found with product reside on the underside of the lid. The area was approximately 2 inches x 1/2 inches in its greatest dimension. The Hopper for the patty machine was found with several small pieces of product residue on food contact surfaces. The following equipment was tagged with US Rejected #B39416993 and [redacted] informed of the non-compliance.

Regulation:

417.5(a)(3) Records documenting the monitoring of CCP’s and their critical limits, including the recording of actual times, temperatures, or other quantifiable values, as prescribed in the establishment’s HACCP plan; the calibration of process-monitoring instruments; corrective actions, including all actions taken in response to a deviation; verification procedures and results; product code(s), product name or identity, or slaughter production lot. Each of these records shall include the date the record was made.

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
