Citation: At 0715 hours while performing the operational sanitation procedure, the following SPS noncompliances were noted in the main processing room. In front of the cooling unit, a build-up of dust was noted on an electrical wire that runs lengthways in front of it, and along the side of the west wall that is in close proximity to the cooling unit.In addition, the majority of the light fixtures had a covering of dust on them and the interior of the light shields have a film on them. I pointed these noncompliant areas out to the Owner who concurred with my findings and I informed him that a noncompliance would be issued for the establishment's failure to meet the requirementsof the CFR Title9 Parts noted in block 6 of th is noncompliance.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
