Citation: On Thursday May 19th 2011 while reviewing the establishment's HACCP plans and pre-requisite programs, the following non-compliances were noted:[newline][newline]In the slaughter BSE pre-requisite program, there is no documentation that shows the proper removal and disposal of all Specified Risk Materials (SRM's). They are removed and condemned at the time of slaughter however, there is no recordkeeping system in place that documents this or to reflect proper cleaning and sanitation between over thirty months and under thirty months of age cattle. The BSE program is to support the decision made that SRM's are not likey to occur. This is a failure to meet the requirements of 9 CFR 310.22(e)(4)(i) and 9 CFR 417.5(a)(1).[newline][newline]Also, in the plant's temperature control pre-requisite program, it lists [redacted] r. Daily monitoring records demonstrate that this temperature is being documented however, there are several temperatures recorded as above [redacted] degrees. This is a deviation from its written pre-requisite program and cannot support the decision made in the Hazard Analysis. This is a failure to meet the requirements of 9 CFR 417.5(a)(1). I notified Mr. of theses non-compliances.

Regulation:

310.22(e)(4)(i) Establishments that slaughter cattle and establishments that process the carcasses or parts of cattle must maintain daily records sufficient to document the implementation and monitoring of the procedures for the removal, segregation, and disposition of the materials listed in paragraph (a) of this section, and any corrective actions taken.

417.5(a)(1) The written hazard analysis prescribed in § 417.2(a) of this part, including all supporting documentation
