Citation: During a review of Records for TriTown Packing Annual Generic Ecoli Sampling I observed no records showing the plant has begun performing these samples. Previous NR dated 06/28/2010 Had Corrective actions of Contacting a new laboratory for sample supplies. As of today(07/16/10) no sampling results have been received by the plant or sampling supplies for collecting and shipping these samples. Mr. was informed of this Non-Compliance, and that failure to perform Generic Ecoli testing as prescribed in the regulations could lead to the shipment of contaminated product. The following Non-Compliance is a failure to follow part 310.25(a) of the regulations and failure to address these issues in a timely manner will result in further regulatory action. Regulation:

310.25(a) (a) Criteria for verifying process control; E. coli testing. (1) Each official establishment that slaughters livestock must test for Escherichia coli Biotype 1 (E.coli) Establishments that slaughter more than one type of livestock or both livestock and poultry, shall test the type of livestock or poultry slaughtered in the greatest number. The establishment shall: (i) Collect samples in accordance with the sampling techniques, methodology, and frequency requirements in paragraph (a)(2) of this section; (ii) Obtain analytic results in accordance with paragraph (a)(3) of this section; and (iii) Maintain records of such analytic results in accordance with paragraph (a)(4) of this section.
